Made in His Image

As we celebrate the birth of Christ, we also celebrate our own birth as Jesus came to us in human form and provided us with tangible evidence that we are made in God’s image.

We can interpret that literally, that we look like God in human form, but also metaphorically, that we have God’s attributes as well. We certainly have Jesus’ example of how we are to act to become more like Him and the Father.

God created everything and in His likeness we also have a desire to create. Recently, I’ve come to know how far I’ve moved from “creator-like” to “consumer”. From a diet of Lean Cuisine that I acquired in Graduate School to a desire to read more books than I could ever accomplish, the world encourages, and even demands, that we consume everything in our surroundings. Enough is never enough.

I’m reassessing my bookshelves and also my nutrition. I really enjoy cooking and I like the preparation as much as the meal. I feel like I am “creating” when assembling a dinner. What I don’t enjoy is throwing out unused food that is often left behind when cooking for one person.

I just discovered the meal preparation company, Sun Basket. Friends had recommended other companies with mixed reviews, but Sun Basket was just endorsed by Williams-Sonoma and uses organic foods as much as possible. I was impressed by their recipe cards with nutritional information. They have gluten-free, paleo and vegetarian options. My first shipment arrived this week and my first meal for two was really enough for three meals, one dinner and two lunches. It was Japanese Pork Curry with Broccoli and Cauliflower “Rice” and was delicious!

It fulfills my need to create with the chopping and assembling and there were no leftover ingredients to spoil in my refrigerator.  

Now on to tackling the bookshelves. I want to enjoy reading again too, savoring each book rather than racing through one just to get to the next one.
